While there are multiple ways to adjust inventory, such as using excel sheets, etc., the recomended approach is with inventory audits. This built in feature allows multiple people to work on an inventory audit, and to limit the audit to a category or area of a particular store or inventory location (for example a mobile van or warehouse).
